We love fajitas here at the ranch. They are a hit every single time. This basic recipe uses all whole food ingredients and comes together in a snap. You can prep it one day ahead or in large batches to freeze for future meal prep. This ranch cook loves freezer meal prep!

Here’s a hint: always grill an extra. Enjoy fajitas from one steak and meal prep with the other steak. Some ideas for meal prepping with fajita steak are fajita salads, quesadillas, wraps and pizza. That’s almost an entire week of meals. Reheat and ready to go after a late night of sports practice, meetings or when life happens.

Use the fajita marinade with a lean flank steak that packs a protein punch and fits into almost all meal planning. It’s also a great choice for flat iron steak, sirloin and skirt steaks.

Fajita Marinade Recipe


  • 2 cloves garlic, chopped
  • 1 jalapeno, seeded and chopped
  • 3 Tablespoons olive oil
  • 1 Tablespoon chili powder
  • 1 teaspoon cumin
  • 1/4c fresh lime juice


  1. Combine all ingredients and mix well.
  2. Add to steak in a sealable bag.
  3. Marinate overnight or freeze.
